4 large Vidalia onions, chopped
7 tablespoons oleo
1 5-ounce can evaporated milk
1 tube Ritz crackers, crushed
1 1/2 cups grated cheddar cheese
Salt and pepper to taste
Boil onions until tender, drain. Heat 4 tablespoons oleo in skillet and sauté onions. Place onions in 8x8 baking dish. Mix milks, soup, cheese and 1/2 of crackers; pour over onions. Mix the other half of crackers with 3 tablespoons melted oleo and sprinkle over top. Bake at 375 degrees until crackers are crunchy.
