3 medium yellow squash, cut in cubes
1 medium onion, chopped
1 package Mexican cornbread mix
3/4 cup whole kernel corn, drained
1/2 cup shredded cheddar cheese (optional)
1 egg
Salt and pepper to taste
Cook squash and onion until tender and drain well (should be about 2 cups). Add all other ingredients and mix well. Shape into patties and hushpuppies (may need to add a small amount of cornmeal to make the right consistency) and deep fry.
