Creamy Polish Sausage Stew

8-10 medium red potatoes, sliced
2 large white onions, quartered
1 large green pepper, sliced
1 large sweet red pepper, sliced
2 pounds smoked Polish sausage, sliced
1/3 cup cooking oil
2 teaspoon salt
1 teaspoon pepper
1 pint heavy cream
3 tablespoons cornstarch
2 tablespoons water
Place potatoes in a five-quart roasting pan; add onions, peppers and sausage and toss gently. Mix oil, salt and pepper; pour over meat and vegetables and stir to coat. Cover and bake at 350 degrees for 45 minutes. Stir and add cream, cover and bake 30-40 minutes longer or until potatoes are tender. Mix cornstarch and water and add to stew. Place pan on stove top and bring to a boil, stirring constantly, until thickened. Makes 10-12 servings.
