Ingredients
3 cups all-purpose flour
1 1/2 teaspoon salt
1 1/2 teaspoon soda
1 1/2 cinnamon
1 1/2 teaspoon nutmeg
3 cups sugar
1 cup cooking oil
4 eggs
2/3 cup orange juice
2 cups sweet potatoes, cooked & mashed
1 cup nuts, chopped
1 cup raisins
Directions
Sift together first five ingredients. Set aside. Cream together sugar, oil and eggs; add juice and potatoes. Gradually add flour mixture until well blended. Add nuts and raisins and mix thoroughly. Grease and flour four 16-ounce coffee cans and fill equally with dough. Place cans on a cookie sheet and bake in a preheated, 350-degree oven for one hour. Cool in cans.
