|Key Lime Cake|
|1 box lemon cake mix
1 box lime Jello
1 1/2 cups vegetable oil
1.2 cup orange juice
4 tablespoons confectioners' sugar
1/2 cup Key Lime juice
1 box confectioners' sugar (minus amount used for glaze)
1 8-ounce package cream cheese, softened
1 stick butter, softened
1 teaspoon vanilla
|Mix first ingredients; beat two or three minutes at medium speed. Pour into three round, greased and floured cake pans. Bake at 350 degrees approximately 25 minutes. To glaze, mix confectioners' sugar and lime juice. While layers are still warm, drizzle glaze over layers.
Cream together margarine and cream cheese; blend in sugar and vanilla. Ice cake when cooled completely.
