Ingredients
2 1/2 cups plain flour
1 1/2 cps sugar
1 teaspoon baking soda
1 teaspoon cocoa
1 cup buttermilk
1 1/2 cups vegetable oil
1 teaspoon vinegar
1 ounce red food coloring
2 eggs
1 teaspoon vanilla
Frosting:
1 stick oleo
1 8-ounce package cream cheese
1 box confectioners' sugar
1/2 teaspoon vanilla
1 cup chopped pecans
Directions
Preheat oven to 350 degrees. Cream sugar and oil, add eggs. Beat well. Sift together flour and soda- set aside. Mix together food coloring, vinegar and cocoa. Add to sugar and oil mixture. Add vanilla flavoring. Add flour mixture alternately with buttermilk. Blend well. Pour into four 9-inch cake pans and bake. Cool layers and frost. Frosting: Let oleo and cream cheese soften at room temperature. Cream well. Add confectioners' sugar and continue beating until creamy. Add vanilla and nuts. Spread on cake.
