Mild or Hot Banana Peppers (mmmm . . . good)

2 teaspoons olive oil
1 teaspoon salt (pickling)
1/8 teaspoon oregano
1 teaspoon pickling spice
1/16 teaspoon alum
3-4 pieces garlic (1/2-inch buds)
Hot peppers, optional
For 10 pints:
1 peck banana peppers
5 cups white vinegar (5% acidity)
4 large bulbs garlic
1 (1 1/2-ounce) can pickling spice
30 small jalepeno peppers
Seal and set jars out in the sun six to eight hours. or place filled jars (without lids) in the microwave on high for two minutes, then seal one jar at a time.
