Summertime Squash Casserole

3 pounds fresh summer squash, sliced
1/2 cup fresh onion, chopped
1/2 cup fresh bell pepper, chopped
2 eggs
1 can cream of mushroom soup
6 slices of bacon (fried and crumbled)
9 slated crackers, crushed
Salt and pepper to taste
1 teaspoon garlic powder, optional
1 cup grated sharp cheddar cheese
Wash, cut and boil squash until tender. In a mixing bowl, combine onion, bell pepper, eggs, mushroom soup, crumbled fried bacon, crackers (crushed), salt, pepper, garlic powder (if desired) and grated cheese. Drain squash and add to the mixture and stir. Pour into a buttered casserole dish. Bake at 374 degrees uncovered for 45 to 60 minutes, until brown.
