Ingredients
1 1/4 pounds yellow squash
1/2 cup chopped onion
1 teaspoon salt
1/2 teaspoon sugar
2 eggs
1 cup cracker crumbs
Deep fat for frying
Directions
Cook squash and onion until tender; drain well and mash. Add sugar, salt, beaten eggs and cracker crumbs and mix well. Let chill overnight. Spoon/shape into 3 -inch rolls, roll in corn meal and deep fry until brown. Serve hot.
