Green Tomato Bars

4 cups green tomatoes, finely chopped
2 cups packed brown sugar, divided
2 tablespoons lemon juice
1 teaspoon lemon flavoring
3/4 cup butter, softened
1 1/2 cups all-purpse flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups old-fashioned oats
1/2 cup chopped walnuts
Drain tomatoes on paper towels for 10 minutes. In a sauce pan, combine tomatoes, one cup sugar and lemon juice. Simmer uncovered 20-25 minutes or until thickened. Remove from heat and stir in flavoring; set aside. In mixing bowl, cream butter and remaining sugar; add flour, baking soda and salt. Mix well, stir in oats and nuts. Press 2 1/2 cups of mixture on bottom of greased 13x9x2-inch baking pan. Spread tomato mixture over crust. Crumble remaining oat mixture on top. Bake at 375 degrees for 30-35 minutes or until golden brown. Makes two dozen bars.
