1 1/2 cups apple cider
1 tablespoon brown sugar
2 teaspoons salt
1/4 teaspoon cinnamon
1/4 teaspoon ginger
2 whole cloves
3-4 pound chuck roast of beef
All-purpose flour
Mis the first six ingredients to make marinade.Pour over beef and let stand 24 hours in refrigerator. Remove beef from marinade (save). Sprinkle meat with flour and brown in hot fat in Dutch oven, turning to brown all sides. Turn heat to low, add marinade, cover and simmer for three hours. Thicken gravy, if desired.
