Ingredients
1/2 cup canned pumpkin or sweet potatoes
2 cups cornmeal mix
1/4 teaspoon cinnamon
1/2 teaspoon nutmeg
1 beaten egg
1/2 cup milk
1/4 cup honey
1/4 cup oil
Directions
Preheat oven to 400 degrees. Grease a 12-muffin cup pan or line with paper baking cup and set aside. Stir together cornmeal mix, cinnamon and nutmeg; combine egg, pumpkin (or potatoes), milk, honey and oil; add all at once to dry ingredients, stirring just until moistened. Fill muffin cups two-thirds full. Bake 18-20 minutes.
Chef's note: You can bake this in a loaf pan for one hour at 350 degrees and slice for a cake instead of muffins
