5 pounds yellow squash, finely chopped
2 large onions, chopped
1 large bell pepper, chopped
6 tablespoons salt
2 1/2 cup cider vinegar
3 1/2 cups sugar
1/2 teaspoon pepper
1 tablespoon celery seed
2 teaspoons turmeric
1 tablespoon dry mustard
1 tablespoon cornstarch
1 tablespoon nutmeg
Combine squash, onions and bell pepper; mix in salt and refrigerate overnight. drain and rinse squash mixture and place in a non-aluminum pot with all remaining ingredients. Bring mixture to a boil, then reduce heat and simmer 15 minutes. Refrigerate or seal in sterilized jars and process in boiling water bath for 10 minutes.
