Watermelon Ice Cream

3/4 cup sugar
1 cup water
4 1/2 pounds watermelon chunks, seeded
Cook sugar and water over medium heat, stirring constantly until sugar us completely dissolved. Then, without stirring, allow the mixture to reach the boiling point, reduce heat and simmer for five minutes. Transfer syrup to a large bowl and set in a basin of very cold water until completely cooled. Cover and refrigerate for one hour. In a food processor or blender, puree the watermelon chunks. Strain and stir into the col syrup. Freeze according to the freezer manufacturer's directions.
