Cream of Broccoli Soup

1 large onion (coarsely chopped)
1 medium carrot, sliced
1 small stalk of celery (with leaves), sliced
2 cloves of garlic, finely chopped
3 cups chicken stock or broth
1/4 cup of uncooked rice
3 cups broccoli chopped (peel stem)
2 cups low-fat milk
1 teaspoon salt
Pinch of cayenne pepper
In a large saucepan, combine onion, carrot, celery, garlic and chicken stock. Bring to boil. Add rice and cover. Simmer 15-20 minutes. Add broccoli. Cover and simmer until broccoli is tender (about five to seven minutes). Pour into blender or food processor and puree. Return to saucepan and add milk, salt and cayenne. Serve hot or refrigerate and serve cold with a spoonful of low-fat sour cream and chopped chives.
