1 20-ounce can crushed pineapple
1 10-ounce package dozen strawberries, thawed
1 6-ounce package strawberry gelatin
2 bananas, peeled and sliced
1 cup miniature marshmallows
2 tablespoons all-purpose flour
1/2 cup sugar
1/8 teaspoon salt
2 teaspoons butter
1 12-ounce package Cool Whip
1/2 cup shredded coconut, optional
1/2 cup chopped pecans
sliced green and red cherries
Drain pineapple, reserving one cup juice. Set aside. Prepare gelatin according to directions, using only one cup cold water. Stir in pineapple, strawberries, bananas and marshmallows. Pour into a 9-inch square pan, chill until firm. Combine flour, sugar and salt in a small saucepan; add butter. Cook over medium heat until mixture reaches a boil and thickens. Remove from heat and cool completely. Fold into the Cool whip the cooked juice mixture and nuts and coconut. Spread over chilled gelatin. Top with sliced green and red cherries.
