Sweet Potato Cheesecake

1 1/2 cup graham cracker crumbs
2 tablespoons sugar
1/4 cup, plus 2 tablespoons butter or margarine
1 1/2 teaspoons ground cinnamon
3 eight- ounce packages cream cheese, softened
1 cup sugar
3 eggs
1 teaspoon vanilla extract, divided
1 cup cooked, mashed sweet potatoes
1 16-ounce carton sour cream
3 tablespoons sugar
Combine first four ingredients; mix well. Press into a 10-inch springform pan. Beat cream cheese in a large bowl until soft and creamy. Slowly add one cup sugar, beating until fluffy. Add eggs one at a time time, beating well after each. Stir in sweet potatoes and one half teaspoon vanilla; beat well. Pour cream cheese mixture into crust. Bake at 375 degrees for 25-35 minutes or until set. Beat sour cream on medium speed of mixer for two minutes. Add three tablespoons sugar and remaining vanilla and beat one minute longer. Spread over cheesecake. Bake at 500 degrees for five to eight minutes or until bubbly.
