1 pound ground chuck
2 large onions
2 carrots
3 stalks celery
2 large cans tomatoes
2 cans kidney beans
1 package Chil-O with onions
2 tablespoons chili powder
Salt and pepper
Mushrooms and green peppers, optional
Brown ground chuck and drain. Add Chil-O and cook according to directions. Add chopped celery, onions, pepper, mushrooms, grated carrots, tomatoes with juice and beans with juice. Add salt, pepper and chili powder according to taste. Stir well. Simmer for one hour or so until vegetables are tender. Serve over rice and top with grated cheese. Serves about six.
