4 medium potatoes
3 slices bacon, cut
1 medium onion, chopped
1 tablespoons all-purpose flour
1 tablespoons sugar
1/2 teaspoon salt
1/4 teaspoon celery seed
Dash of pepper
1/2 cup water
1/4 cup white vinegar
Prepare and cook potatoes; cool. Cook bacon until crisp. Cook onion in bacon fat over medium heat. Stir until tender. Stir in flour, sugar, salt, celery and pepper. Cook over low heat, stirring constantly until bubbly. Remove from heat. Stir in water and vinegar. Heat to boiling, stirring constantly. Boil one minute. Remove from heat. Stir in potatoes and bacon. Heat, stirring gently to coat potatoes. Serve hot or cold.
