4 pounds ground beef or turkey
2 or 3 tablespoons vegetable oil
2 28-ounce cans whole tomatoes, in juice, cut up
2 15-ounce cans tomato sauce
2 cups water
**3/4 cup chili seasoning mix
2 28-ounce cans pinto beans, optional
**Seasoning mix:
4 teaspoons cumin seeds
2 teaspoons dried oregano
2 teaspoons salt
1 teaspoon garlic powder
1/4 cup paprika
1 teaspoon crushed dried red pepper
1/4 cup ground chili pepper or cayenne
2 tablespoons minced onion
In large kettle, brown beef in oil, stirring occasionally. Add tomatoes, tomato sauce, water and seasoning mix. Bring to a boil; cover and simmer for 45 minutes. Rinse beans, drain and add to chili mixture. Cover and simmer 15 to 20 minutes. Makes 15 to 20 servings.
