No Water Roast Chicken

6 or 8 medium potatoes, peeled and quartered
5 large carrots, cut in chunks
1 large onion, diced
1 celery stick, diced
1 3-pound chicken
Salt, pepper and garlic powder to taste
In large baking dish, spread potatoes, carrots, onion and celery evenly over bottom of pan. Sprinkle salt and pepper over vegetables. Split chicken half open from breast side. Wash good and drain. Add salt, pepper and garlic on inside and out. Place on vegetables breast side down. Cover with foil tightly and place in oven at 500 degrees for 1 to 1 1/2 hours or until done. Makes six to eight servings.
