Watermelon Rind Preserves

2 lemons
2 gallons or prepared melon rinds
4 tablespoons salt per quart of water
9 cups or sugar
8 cups of water
4 cinnamon sticks
Remove all ripe melon from rinds. Soak them overnight in brine water, using 4 tablespoons of salt for each quart of water you use. approximately 4 quarts will cover the rinds. Rinse the rinds in tap water three times. Soak them for two hours in ice water. Drain well. Cover rinds in fresh water and cook until tender. Drain well. Put rinds in large container, add the sugar and water and boil until rinds are clear and the syrup is thick. Add lemons, slicing them thin. Let cinnamon stick boil in the syrup. Cloves may be added, according to personal taste.
