Sweet and Sour Pork

20 ounce can of pineapple chunks
1 1/2 pounds boneless pork shoulder cut into 2-inch strips
3 tablespoons vegetable oil
1/2 cup water
1/4 cup light brown sugar, firmly packed
2 tablespoons cornstarch
1/2 teaspoon salt
1/4 cup cider vinegar
2 tablespoons soy sauce
1 small green pepper cut into strips
1 small onion, thinly sliced
Drain pineapple, reserving juice; set both aside. Brown pork in a large skillet; stir in water. Cover and simmer one hour or until tender. Combine sugar, cornstarch and salt in a medium size bowl. Stir in pineapple juice, vinegar and soy sauce. Add to pork and cook, stirring constantly until smooth and thick. Add pineapple chunks, green pepper and onion; toss lightly and cook 2-3 minutes.
