Ingredients
1 1/2 cups brown sugar
1/2 cup margarine or butter
2 eggs
2 cups flour
1 teaspoon baking soda
1 cup buttermilk or 2 tablespoons vinegar in 1 cup milk
1 teaspoon vanilla
2 cups rhubarb, chopped
Topping:
1/2 cup white sugar
1 teaspoon cinnamon
1/2 cup ground nuts, optional
Directions
Mix all ingredients for the cake. Put topping on before baking. Bake at 350 degrees for 35 minutes. Serve warm with whipped cream or ice cream or plain as a breakfast coffeecake.
