Ingredients
Cake:
2 cups sugar
1 cup shortening
5 eggs
1 cup all-purpose flour
1 cup milk
2 teaspoons vanilla
Filling:
1 cup sugar
1 cup milk
1 pound frozen coconut
12 large marshmallows
1 teaspoon vanilla
Frosting:
2 cups sugar
1 stick margarine
1 small can evaporated milk
2 to 3 tablespoons cocoa
Directions
To make cake, cream together sugar and shortening. Beat in eggs, one at a time. Sift the flour. Add to the batter, alternating with the milk. Stir in vanilla. Pour batter into 3 greased and floured caked pans. Bake at 350 degrees for 30 to 35 minutes. To prepare filling, combine sugar and milk in a saucepan and bring to a boil. Add coconut and marshmallows. Stir and boil for 5 minutes. Stir in vanilla. Spread filling between cake layers while they are still hot. To make frosting, combine all ingredients in a saucepan and cook over medium heat. Stir constantly until thickened and reaches soft ball stage. Frost cooled cake.
