Cool Dinner Salad

2 cups penne pasta
12 ounces water-packed tuna
1 small cucumber, diced
1 medium bell pepper, diced
1/2 yellow or red onion, diced
4 hard-boiled eggs, diced
Fresh lettuce or spinach leaves
Grated Parmesan cheese
Croutons for garnish
1 1/2 cups mayonnaise
1/2 cup seasoned rice vinegar
1 teaspoon paprika
1 teaspoon black or white pepper
1 teaspoon garlic powder
Cook pasta according to package directions. Drain in a colander. Place colander in a bowl of cold water to cool pasta. Gently mix tuna, cucumber, bell pepper, tomato, onion and eggs. In a separate bowl combine dressing ingredients until well blended. Add pasta to tuna mixture and mix. Pour dressing over salad and fold until coated thoroughly. Serve on top of greens. Sprinkle with cheese and garnish with croutons. Makes 4 large servings.
