Hearty Bean Soup

2 slices bacon, halved
14 cup chopped green pepper
1/4 cup chopped onion
1/2 cup chopped carrot
1 clove garlic, minced
1 #303 can tomatoes, mashed
1 cup water
2 cans Bush's Best Navy Beans
1 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon red pepper
1/2 teaspoon sugar
2 teaspoons parsley flakes
Fry bacon until crisp in a large heavy saucepan. Drain and set bacon aside, leaving about 1 tablespoon of drippings in pan. Add green pepper, onion, carrot and garlic to pan. Cook 5 minutes then add tomatoes and water. Stir in beans, salt, pepper and sugar. Simmer 30 minutes to 1 hour. Add cooked bacon and parsley flakes. Cook 5 minutes more and serve.
