2 tablespoons minced onion
2 tablespoons minced green pepper
1 tablespoon fat (butter or bacon drippings)
3/4 cup sliced okra
2/4 cup canned or chopped fresh tomatoes
1 teaspoon sugar
Salt and pepper to taste
Saute the onion and green pepper in the hot fat until tender. Add okra and cook 5 minutes, stirring constantly. Add tomatoes and seasonings and simmer for about 20 minutes, adding a small amount of water if necessary. Makes two servings.
