Baked Fruit Dressing

1 15-ounce can sliced peaches
1 16-ounce can sliced pears
1 15 1/2-ounce can pineapple chunks, drained
1/3 cup raisins
1/3 cup chopped walnuts
3/4 cup firmly packed light brown sugar, divided
1 teaspoon vanilla extract
1 15-ounce can apricot halves, drained
5 slices white bread, toasted
3/4 cup butter or margarine, melted
Combine peaches, pears, pineapple, raisins, walnuts, 1/2 cup brown sugar and vanilla; stir gently. Spoon into a lightly oiled 13x9x2-inch baking dish; cut bread slices into 1/2-inch cubes and sprinkle over fruit mixture. Arrange apricot halves on top. combine butter and remaining 1/4 cup brown sugar, pour over dish. bake at 325 degrees for 25-30 minutes. Serve warm, yield eight to 10 servings.
