Ingredients
1st Day Mix:
2 1/2 cups sugar
1 1/2 cups candied fruit starter
1 16-ounce can sliced peaches with juice
10th Day Add:
2 cups sugar
1 16-ounce can chunk pineapple with juice
20th Day Add:
2 cups sugar
1 16-ounce can fruit cocktail with juice
1 10-ounce jar maraschino cherries with juice
Cake:
(Fruit will make 3 cakes)
1 box yellow cake mix
2/3 cup oil
4 eggs
1 small box instant vanilla pudding mix
1/3 of the friendship fruit mixture
1 cup chopped pecans
Directions
1st Day Mix:
Stir together and cover in large container. Stir every day.
10th Day:
Stir every day
20th Day:
stir every day
30th Day:
Drain fruit and reserve juice. Divided juice into 1 1/2 cups portions. Place in tight containers and give to friends with the cake recipe as soon as possible. Starter is good if used within 5 days. Divide fruit into thirds. Makes 3 cakes or you can use fruit as a topping for ice cream. Not: During the 30 day period none of the recipe should be refrigerated. Place fruit in a covered container at room temperature. Fruit may bubble and lid may pop off. This is okay but you may want to cover with a towel. Cake can be frozen but fruit juice cannot.
Cake:
Mix cake ingredients together. Pour in a greased and floured tube or bundt pan. Bake at 300 degrees for 1 hour and 15 minutes or until tested done.
