Crisp Kraut Salad

1 pound sauerkraut
1 can (2 ounces) sliced pimento, drained
1/2 cup chopped onion
3/4 cup sliced celery
1 heaping tablespoon sugar
1 cup shredded carrots
1 medium green pepper, chopped
1/4 cup vinegar
3/4 teaspoon salt
1/8 teaspoon black pepper
Drain sauerkraut and place in a bowl. Add pimento, onion, carrots and green pepper. In a separate bowl combine vinegar, sugar, salt and pepper. Stir until sugar is completely dissolved. Pour over salad and toss until completely coated. Chill and serve.
