Butternut Squash

3 pounds butternut squash
1/4 cup water
2 tablespoons butter
Wash squash but do not peel. Cut lengthwise and scoop out seeds. In an oblong baking dish place water and butter. Place squash in dish. Cover with plastic wrap. Microwave on high for 5 minutes.Cook for 5 minutes more in high. Check for tenderness with your finger. Continue to cook 1 minute at a time until tender to the touch. The skin begins to wrinkle when it's tender. Season with butter and salt or to taste. Serve as a side dish.
