Tropical Rice Pudding

1 cup long grain rice
2 cups water
1 can sweetened condensed milk
1 cup shredded coconut
2 bananas, sliced
1/2 cup milk Whipped topping, optional
In a microwave safe dish cook rice and water for approximately 30 minutes on the low setting. Rice should be done and fluffy. Cool for 5 minutes longer if not done, as microwave will vary. Stir in sweetened condensed milk, coconut and sliced bananas. Add milk if needed to get proper consistency. Pudding should be moist but not soupy. Chill for several hours or overnight. Serve with whipped topping or plain. Makes 6 generous servings.
