Poached Pears with Raspberry Sauce

2 fresh Bartlett pears
1 cup water
1/2 cinnamon stick
1 whole clove
2 tablespoons honey
1/2 cup part-skim ricotta cheese
2 teaspoons lemon juice
1/2 cup fresh or frozen raspberries, pureed
2 tablespoons sliced almonds, toasted
Peel, core and cut pears in half. In a saucepan combine pears, water, cinnamon stick and clove. Bring to a boil. Reduce heat, cover and simmer until pears are tender, about 10 minutes. Drain pears. In a bowl, combine honey, cheese and lemon juice. Fill each pear half with mixture. Strain berries through a sieve to make a sauce. Place sauce on plate to make a circle. Place filled pear half on sauce Garnish with almonds. Makes 4 servings. 155 calories per serving.
