3 eggs
2 cups sugar
1 cup oil
2 cups all-purpose flour
1 teaspoon cinnamon
1 teaspoon allspice
1 teaspoon ground nutmeg
1 teaspoon baking soda
1/2 teaspoon salt
2/3 cup buttermilk
1 pint fig preserves or pear preserves
1 cup chopped pecans
Beat eggs. Add sugar and oil and set aside. Sift flour, spices, baking soda and salt together. Add dry ingredients alternately with buttermilk to the egg mixture. Sprinkle nuts with a little flour to coat. Add preserves and coated nuts to batter. Pour batter into a greased and floured 9x13 glass baking dish. Bake at 325 degrees until an inserted toothpick comes out clean.
