Blackened Catfish

1 teaspoon paprika
1/2 teaspoon sage
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon red pepper
4 catfish fillets (4 to 5 ounces each)
Non-stick cooking spray
1 teaspoon olive oil
Put all herbs, sugar and salt in a bag and shake until well blended. Put fillets, one at a time, into the bag and shake to thoroughly coat. Coat a large non-stick skillet with cooking spray. Add oil and heat over medium low heat. Add catfish, skinned side up, and cook 4 to 5 minutes until blackened. Repeat process on other side. Serve with lemon slices.
