6 eggs, separated
1/2 cup sugar or more to taste
Pinch of salt
1 1/2 cups shipping cream
1 teaspoon rum flavoring
1 teaspoon vanilla
Beat egg yolks and sugar in a bowl until thickened then set aside. Beat egg whites with salt until almost stiff then refrigerate. Add cream to yolk mixture in a saucepan and heat over low heat, stirring constantly, until thoroughly hot but not boiling. Remove from heat. Using an electric mixer, add egg whites slowly to yolk mixture, beating constantly. Blend in flavorings. If too thick, thin with milk. Refrigerate until cold. Garnish with nutmeg to serve. Makes 6 to 8 servings.
