Banana Cake

1 cup shortening
2 cups sugar
2 eggs
2 cups mashed, ripe bananas
1 teaspoon vanilla
3 cups sifted cake flour
1 teaspoon salt
1 teaspoon baking soda
1/4 cup buttermilk
1 cup chopped pecans
Banana Frosting:
1/4 to 1/2 stick margarine
1/2 cup mashed, ripe banana
1 teaspoon lemon juice
1 box powdered sugar, sifted
Preheat oven to 350 degrees. Grease and flour two 9-inch round cake pans. Cream shortening and sugar until fluffy. Add eggs one at a time, beating well after each addition. Fold in bananas and vanilla. Sift together flour, salt and baking soda. Beat this into the creamed mixture with buttermilk. Stir in chopped pecans. Pour batter into prepared pans. Bake 40 to 45 minutes. Cool completely then frost. To make frosting, cream margarine until fluffy. Stir in bananas and lemon juice. Gradually beat in sifted sugar until desired consistency.
