Ovens Barbecue Brisket

1 beef brisket, 3 to 4 pounds, trimmed
1 tablespoon cooking oil
1 teaspoon salt
1 teaspoon coarse ground pepper
1/2 teaspoon garlic powder
1/2 cup water
Barbecue sauce
1 large aluminum pan
Preheat oven to 450 degrees. Rub oil all over brisket. Mix salt, pepper and garlic powder and sprinkle all over brisket. Rub in spices Roll or fold brisket and place in pan. More than 1 brisket can be cooked at the same time. Just remember to roll or fold each brisket and leave about 1 to 2 inches of space between each one. Place pan in the oven and bake for 30 minutes. This browns and seals in the juices. Add water and cover with aluminum foil. Reduce heat to 250 degrees and bake for 4 to 5 hours. The center of the brisket should be light brown in color when done. Remove brisket from pan reserving at least half the pan juices. Slice brisket against the grain and chop. Return to the pan. Mix pan juices with barbecue sauce to taste. Add sauce to chopped brisket and reheat.
