Ingredients
2 large lemons
2 cups sugar
4 large eggs, well-beaten
Pastry for two-crust pie
Directions
Slice lemons paper-thin. Discard ends and seeds. Combine with sugar. Let stand two hours or overnight, if possible. Stir occasionally. Add beaten eggs. Turn into pastry-lined pie plate, arranging lemon slices evenly. Cover with top crust. Seal and flute edge. Cut slits in top crust near center. Bake in 450 degree oven for 15 minutes. Reduce heat to 375 degrees and cook 20 minutes more or until knife inserted in center comes out clean. Makes 8 to 10 servings.
