No-stick corn oil cooking spray
1 large onion, cut into thin wedges
3 cloves garlic, pressed
1 small eggplant, peeled and cut into 1/4 inch cubes (about 3 cups)
2 medium-sized tomatoes, chopped
1/2 teaspoon dried oregano
1/2 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon crushed red pepper
3 cups cooked brown rice
3 egg whites
1 1/2 cups (6 ounces)
Shredded Jarlsberg cheese, divided
Generously spray 10-inch skillet with cooking spray and heat over medium heat. Add onion and garlic and sauté 5 minutes. Add eggplant, tomatoes, pepper, oregano, sugar, salt and pepper. Increase heat to high; cover and cook 5 minutes. Reduce heat to low; cook 7 to 8 minutes longer, until vegetables are tender. Preheat oven to 450 degrees. Spray 12-inch pizza pan and rubber spatula with cooking spray. Combine rice, egg whites and 1 cup cheese. Spread rice mixture on pan, building up outside edge to form a crust. Bake 20 minutes. Spread eggplant mixture over crust; top with remaining 1/2 cup cheese. Bake 5 minutes longer, until cheese melts. Makes 6 servings.
