Ingredients
8 cups ground meat
1/8 cup sage
1/8 cup vinegar
1 tablespoons salt
1 tablespoon black pepper
Directions
Cook hog's head that has been scraped and cleaned very well. Remove eyes and brains. Cook until meat falls off the bones. This should the head, ears and tongue. Remove meat from the bones and run through a meat grinder. Mix ground meat thoroughly with sage, vinegar, salt and pepper. Place in a bowl and cool before slicing. It is best to place it in a bowl with holes so part if the grease will drain off.
