|Easy Winter Soup|
|1 14.5-ounce can diced tomatoes with basil & garlic.
1 14.5-ounce can chicken or vegetable broth (or use instant bouillon).
1 15-ounce can Great Northern white beans, drained and rinsed.
1 cooked rotisserie chicken; strip off meat and dice to make 2½ cups.
½ teaspoon herbes de provence. (Don’t skip.)
1 14-ounce package frozen leaf spinach, thawed
|Place all ingredients except spinach in a kettle. Bring to a boil; then simmer for 5 minutes. Add spinach and simmer 5 more minutes. Serve in 4 large bowls. Top with a dollop of sour cream, if desired. Nice with a side of cornbread.|
