Papa's Pan Crusted Catfish Fillets

4 - 6ounce Catfish Fillets
1 teaspoon yellow mustard
1 tablespoon lemon juice
1/4 teaspoon lemon zest
1 dill sprig; finely chopped
1/8 cup of flour
1/3 cup of Aunt Jemimah corn meal mix
1 teaspoon paprika
salt and pepper to taste
2 teaspoons of butter
Salt and pepper the catfish fillets. Smear both sides of fillets with mustard. Sprinkle dill on the fillets. Let set up to 2 hours. Sprinkle with the lemon juice and lemon zest. Mix the flour, cornmeal mix and paaprika together. Coat the fish fillets with the cornmeal mixture, lightly shake off any excess. Heat the butter in a non-stick skillet over high heat making sure to spread the butter over the entire skillet. Just before the butter starts to brown place the catfish fillets in the skillet. Cook the fillets approximately 2 minutes or until crspy brown. Turn the fish fillets and lower the heat to medium high heat. Cook approximately 2 minutes on this side or until crspy bown. Turn the fish fillets once more and cook an additional 1.5 minutes until golden brown and crispy. Serve immediately. Makes 4 servings.
