Broiled Shrimp with Vegetables and Rice

1/3 cup olive or vegetable oil
3 Tbs. lemon juice
2 Tbs. soy sauce
½ tsp. crushed red pepper
2-3 cloves garlic, minced
(Optional: flat-leaf parsley, chopped}
1# large shrimp, peeled and deveined (approx. 20)
1 small onion cut in bite-size pieces
1 medium bell pepper, cut in bite-size pieces
10 button mushrooms, quartered
1 medium tomato cut in bite-size chunks
(Note: Other vegetables can be added: zucchini chunks, artichoke hearts, broccoli florets, etc.)
Rice: 3 c. cooked (1 c. uncooked)
Combine marinade ingredients. Add shrimp and vegetables and stir to coat. Marinate 2 hours. Spread on baking sheet and broil 3 minutes, then turn and broil 2 minutes more or until shrimp turns pink. Serve over rice.
