Easy Blueberry Cobbler

3 cups fresh blueberries
2 teaspoons lemon juice
1/2 teaspoon vanilla extract
1 1/2 cups Bisquick
3/4 cup sugar
1/2 teaspoon ground cinnamon
1/2 stick butter, melted
Preheat oven to 350 degrees. In a large bowl, toss together the blueberries, lemon juice and vanilla. Spoon mixture into a buttered 8-inch square baking pan. In the same bowl combine Bisquick, sugar, and cinnamon. Sprinkle dry mixture over the blueberries, then pour melted butter over the dry ingredients. Bake for 45 to 55 minutes, or until crispy. Best served warm with vanilla ice cream!

This is such an easy recipe because it is made with ingredients that I almost always have on hand. Although the recipe calls for fresh blueberries I have also made it many times with frozen blueberries. Turns out great every time!
