No Bake Energy Bites

1 cup dry old-fashioned oatmeal
2⁄3 cup toasted coconut flakes
1/2 cup ground flaxseed
1/2 cup peanut butter
1/2 cup dark chocolate chips
1⁄3 cup honey
1 teaspoon vanilla
Mix oatmeal, toasted coconut flakes, and flaxseed in a medium bowl. Set dry ingredients aside. Place peanut butter, dark chocolate chips and honey in a microwave-safe dish. Microwave on high for 30 seconds. Add vanilla to the peanut butter mixture and stir well. Pour the peanut butter mixture over the dry mixture and stir until thoroughly moistened. Shape into 1-inch balls and chill until firm. Yield: approximately 24 energy bites.
