Oatmeal Apricot Cookies

2⁄3 cup dried apricots, coarsely chopped
1⁄3 cup boiling water
1 cup packed light brown sugar
1/4 cup unsalted butter, at room temperature
1 egg
11/2 teaspoons of vanilla extract
1/2 cup all-purpose flour
1 teaspoon cinnamon
1 teaspoon baking soda
1/4 teaspoon salt
21/2 cups of quick- cooking rolled oats
Preheat oven to 350 degrees. Coat 2 baking sheets with cooking spray. Combine apricots and water in food processor, and process until well blended; transfer to a large bowl. Add brown sugar and butter, mix well. Add egg, flour, vanilla, cinnamon, baking soda and salt; mix well. Stir in oats. Drop by tablespoons onto prepared sheets. Bake at 350 degrees until cookies are golden, about 10-12 minutes. Transfer cookies to wire rack to cool. Store in cookie jar.
