|Stevie's Family Macaroni and Cheese|
|1 cup dry macaroni
1 cup of milk
4 ounces grated cheese (colby or cheddar)
Salt and pepper to taste
|Four cups of dry macaroni fills a 13x9x2 baking dish (which is 4 times the basic recipe). Boil macaroni until done (around 10 minutes). Drain and rinse with cold water. Put half in a greased baking dish sprinkle half of the grated cheese on macaroni. Lightly sprinkle with salt and pepper. Put the rest of the noodles and cheese on top. Lightly sprinkle with salt and pepper again. In the meantime, heat the milk in a sauce pan until just scalded (little bubbles around the edge—do not boil) In a bowl, slightly beat the egg and then slowly add the hot milk, stirring constantly to cook eggs but not curdle them. Pour this mixture over the macaroni and cheese. Bake in a 350 degree oven for one hour until bubbling and slightly brown on top. Be sure you fix plenty when you become a grandparent—it goes fast.
