Russian Apple Pie

3 large eggs
4 large granny smith apples
1/2 cup sugar
1 cup flour
Remove core from apples, peel, and cut in large 2-inch chunks. Lay parchment paper on the bottom of baking form. (I don’t always bother with the parchment paper.)
Lay cut apples on top of parchment paper. (I prefer to sprinkle a little bit of cinnamon on top of apples.) Let eggs come to room temperature for 10 minutes, then mix till light yellow and foamy; add sugar in small portions at a time. Let sugar dissolve; add flour; mix till you see air bubbles. Pour mixture on top of apples. It will soak throughout Don’t mix apples with batter. Bake for 55 minutes on 375 degrees.
